The Best Triple Chocolate Chip Cookies Ever P.S. They're Vegan!

Welcome to my first ever food post! I have thought about widening my content for a while and now thanks to your voting on Instagram I have decided to not only review books but also venture out into food blogging, travel blogging, any blogging I like! In any case let's get on with this DELICIOUS recipe! First of all, I would like to give credit to Liv B on YouTube for creating the original recipe. Second of all, I made a few adjustments to the original recipe because I was trying to make them 'healthier' and I ended up liking even them more!


Without further ado here are the ingredients you will need:

55g (1/4 cup) coconut oil

55g (1/4 cup) vegan butter

200g (1 cup) sugar (brown, cane or coconut sugar)

1 tbsp vanilla

60ml (1/4 cup) almond milk

240g (2 cups) flour

1 tsp baking soda

1 tsp baking powder

60g-120g (1/2 to 1 cup) dairy free chocolate chips


Usually I use coconut sugar because I heard that it is more nutritionally dense but also, besides the health aspect, coconut sugar is absolutely life changing. It has this beautiful caramel flavour and I personally find that it doesn't taste artificial like regular caster sugar does. I hate when you can taste too much sugar because it makes my mouth feel dry and I am not an enormous fan of sugary foods. Usually I crave salty and savoury foods much more than sugary ones!


Directions:

1. Preheat the oven to 190 Degrees Celsius (375 Degree Fahrenheit).

2. Cream together the butter, coconut oil and the sugar. No need to melt the coconut oil unless you are making a double batch, then it is advisable to melt it a little if you are creaming the mixture by hand.

3. Add the vanilla extract and the alternative milk and stir to combine.

4. In a separate bowl, combine the flour, baking powder and baking soda.

5. Add the flour mixture to the wet mixture until combined.

6. Add the dairy free chocolate chips. If you have trouble finding dairy free chocolate chips wherever you live (like I do), or they are simply outrageously expensive, you can just buy a chocolate bar (dairy free, of course) and break it up with a knife. In these cookies I actually made it a triple chocolate chip cookie adding in white, milk and dark chocolate to the mixture!

7. Scoop the cookie dough onto greaseproof paper and place into the oven for about 7-8 minutes, depending on how gooey you want them.
